Seven hours across flat water

The morning starts on foot along a dyke, because the shape of the place only makes sense from above the water: a lagoon held between a river and the sea, kept at its level by people, for six hundred years. Then a flat boat across to the brick stations, which are part building and part trap, with channels and gratings that let a fish in on one tide and not out on the next. A fisherman explains the season, which is short and autumnal, and the grading room where the catch is sorted by size. The afternoon is the smokehouse and the marsh edge, where the water turns from brackish to fresh across about two hundred metres and the birds change with it. You are back on the dyke by three.

Ground, sun and very little shade

Flat, easy underfoot, and that is the trap: there is no shade at all between the dyke and the stations, and the light comes off the water as well as down from the sky. By eleven in July it is punishing. Hat, long sleeves, sun cream, and more water than you expect to drink. The boat is stable and sits low, with a step down into it that people with stiff hips find awkward; say so beforehand and the boatman brings it alongside a fixed landing instead. Mosquitoes from May onward, in numbers worth respecting. Nothing about the day is strenuous, and people still come off it tired, because seven hours of glare will do that to anyone.

Will we actually see eels?

Sometimes not, and we will not pretend otherwise. The run is short and autumnal, and outside it the stations are quiet water: you see the works rather than the catch, the channels, the gratings, the grading room, the smokehouse. Nobody controls the tide, the season or the fish. If the catch is the whole reason you are coming, ask us which weeks are likeliest and take likeliest for what it is.

We do not eat eel.

Say so when you write and the kitchen cooks something else, which happens often enough that it is no trouble to anyone. The plate at the middle of the day sits inside the figure either way. If you would rather skip the meal entirely that is fine too, though the table is where the fisherman talks and the boat is a quiet place by comparison.

Can you book our flights and the train?
